My Favourite Spice Blends – Ras el Hanout

If you’re ever short on time or short on space in your pantry, this special spice blend make food taste amazing. Using spice blends means you get the complexity of flavour of different spices all in the one little packet. I’m sure this will become one of your favourites too!

Ras el Hanout is an exotic spice blend used in Moroccan cuisine, pronounced “raas el ha new”. The name means top of the shop or the very best spice blend that a spice merchant (Souk) has to offer. Originated in the Meghribi villages of North Africa, it is a complex and distinctive mix, beautifully balanced of about 20 to 27 spices and herbs, the quantities of which vary according to the maker. Specific quantities are a much guarded secret from one spice shop to the next and blending is considered an art.

Ras el hanout is a very versatile seasoning used to add colour and captivating flavour to poultry, meat, game, rice and couscous. Perfect for Moroccan tagines and marinades, just sprinkle on chicken, lamb and fish before cooking. Delicious with prawns and other seafood such as Moreton Bay bugs.

Basic Ingredients are: Paprika, Cumin, Ginger, Coriander Seed, Cassia, Turmeric, Fennel Seed, Allspice, Cardamom, Dill, Galangal, Nutmeg, Orris root, Bay Leaves, Caraway Seed, Rose Petal, Cayenne pepper, Cloves, Mace, Black Pepper, Sichuan pepper and Saffron.

My Ras el Hanout Recipe

Makes 60g

Ingredients

1 tbsp black peppercorns
2 tsp cumin seeds
2 tsp coriander seeds
2 tsp caraway seeds
2 tsp fennel seeds
6 cardamon pods
8 whole cloves
4 bay leaves
1/2 tsp sea salt
1 tbsp paprika
2 tsp turmeric
2 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp mace
1/2 tsp allspice
1/4 tsp cayenne pepper
1 pinch saffron

Method

Place black peppercorns, cumin seeds, coriander seeds, caraway seeds, fennel seeds, cardamon pods, whole cloves, bay leaves and sea salt in an mortar and pestle and grind to a powder. Stir in remaining spices and store in an air tight container.
