Layered Carrot Cake with Cream Cheese Frosting


3 eggs
1 cup brown sugar
½ cup caster sugar
1 cup self-raising flour
¾ cup plain flour
1 cup peanut oil or grapeseed oil
½ teaspoon bi-carb soda
1 teaspoon mixed spice
½ teaspoon ground ginger
2 cups grated carrot
½ cup walnuts, chopped
Cream Cheese Frosting
200g cream cheese
50g butter, melted
2 ½ cups icing sugar
1 teaspoon vanilla essence
1 lemon, zest only
10ml lemon juice
½ cup walnuts, roasted, broken up
Viola flowers (optional)


Serves 12

  1. Preheat oven to 160°C (320°F) fan-forced. Grease and line base and sides of 3 x 20cm (8 inch) springform pans. In a mixer, beat eggs and both sugars until thick and fluffy, gradually add both flours and oil at the same time. Add bi-carb of soda, mixed spice, and ground ginger and combine. Fold in grated carrot and walnuts.
  2. Pour cake batter evenly into cake pans (this is very important so you get even cake layers). Bake for 30–35 minutes or until cake is golden and a skewer comes out clean from the centre. Allow to rest in tins for 5 minutes before cooling cakes on a cake rack.
  3. For cream cheese frosting, in a mixer combine cream cheese, vanilla, and melted butter until smooth. Gradually add icing sugar and combine, fold in lemon zest and juice.
  4. To roast the walnuts. Preheat the oven to 180°C (350°F) fan-forced, place walnuts on a baking tray and roast for 3-5 minutes.
  5. Place one cake on a serving plate or cake stand and spread one-quarter of frosting mixture evenly on top. Place the 2nd cake on top repeat with another one-quarter of frosting. Top with remaining cake and spread remaining frosting over the sides and top of the cake and garnish with walnuts.
