12 cooked prawns, shelled and devein
1 avocado,cut in half, sliced thinly, cut in half
1pkt Waterthins bagelettes with poppy seed (store bought)* or any crisp bread
Chipotle aioli (store bought)*
½ bunch chives, finely sliced
2 limes, cheeks cut or quartered
- Place crispbread on a flat surface and place a prawn on top. Lay 2 slices of avocado in the middle of each prawn, slightly sticking up. Add chipotle aioli and scatter chives over the top and cracked pepper.
Place canapes on a serving plate and serve with lime cheeks or wedges.
*Chipotle aioli can be found at most supermarkets. Bagelettes can be found at some supermarkets and gourmet food store. You can use any crisp bread or thinly slice a French stick and toast under the grill. Cool before placing prawns on top.
