500g cooked king prawns, remove shells, de vein
¼ red papaya, peel, cut 1cm cubes
1 avocado, peel, cut 1cm cubes
4 shallots, finely chopped
1 long red chili, finely chopped
½ green capsicum, finely chopped
½ small red onion, finely chopped
1 lemon, juiced
Sea salt & cracked pepper
Continental parsley for garnish
- Cut prawns in 3cm sections and place in a bowl. Prepare all ingredients and add them to the prawns. Lightly toss through and season with salt and pepper.
Spoon prawn salsa into Asian spoons and place on 2 serving platters and garnish each one with parsley.
