
Ingredients (serves 2)
125g quality triple cream brie
1 garlic clove, thinly sliced
25g walnuts
1 teaspoon honey
1 tablespoon thyme leaves + stems
1 tablespoon extra-virgin olive oil or grapeseed oil
Cracked black pepper
1 Baguette, sliced & toasted
Method
- Pre-heat oven to 200°C (350°F). Place cheese in a small ovenproof dish, drizzle with olive oil then scatter over garlic, walnuts, honey and thyme leaves. Insert 2 thyme stems into the cheese to infuse the flavour and bake for 5-6 minutes or until just golden on the top (don’t overcook the cheese otherwise it will collapse).
- Remove from the oven and remove thyme stems, top with cracked pepper and serve with crusty bread.
To Serve
You can use any one of your favourite soft cheeses for this recipe.
