Roast Chicken & Fresh Herb Sandwiches

Ingredients (serves 16)

2 cups roasted chicken breast, shredded
1 cup grated granny smith apple
2/3 cup crème fraiche
¼ cup chives, finely sliced + extra for garnish
1 lime, zest & juice
½ cup coriander, torn
Sea salt & cracked pepper
16 slices white bread (1 loaf)

Method

  1. In a small bowl combine chicken, apple, crème fraiche, chives, lime zest/juice and coriander, mix well, and season to taste with salt and pepper.
  2. Spread the chicken in the centre of each slice in a circle, then top with the remaining bread. Use a 5cm round cookie cutter to cut rounds from the sandwiches. (You can freeze the remaining bread for other uses like stuffing). Alternatively, you can divide the chicken mixture between half the bread slices and top with remaining bread and cut sandwiches into small triangles.

To Serve

Place sandwiches on a serving platter and garnish with chives and serve.
