Ingredients (Serves 2-4)
3 pears, firm but ripe, cored, cut 2cm wedges
90g gorgonzola
90g rocket
¾ cup walnuts, roasted
80ml grapeseed oil
2 tablespoons lemon juice
Sea salt & cracked pepper
Method
- Pre heat oven to 180°C (350°F). Place walnuts on an oven tray and roast for 5-8 minutes, or until a shade darker. Remove from the oven and cool.
- Whisk the grapeseed oil and lemon juice together in a bowl and season to taste.
To Serve
Place half the rocket in a serving bowl, arrange pear wedges and the remaining rocket over the top. Scatter with broken up gorgonzola and walnuts and drizzle over the dressing and serve.
