Ingredients (serves 4-6)
2 bunches baby broccolini, washed
2 packets (260g) cherry vine tomatoes
½ cup pinenuts, toasted
Extra-virgin olive oil or grapeseed oil
Sea salt & cracked pepper
- Preheat oven to 180°C (350°F). Place tomatoes on a roasting tray, drizzle a little olive oil, season with salt and pepper and roast for 8-10 minutes. Remove from oven and set aside ready to serve.
- Add broccolini to a roasting pan, drizzle with a good glug of olive oil, and season with salt and pepper and roast for 5-6 minutes. Remove from oven and set aside ready to serve.
- Heat a shallow non-stick pan over med-high heat, add pine nuts and toast until golden, shaking the pan often, so the nuts don’t burn.
Arrange broccolini in a serving dish, place tomatoes around the plate and scatter with pine nuts and serve.
