Melon, Prosciutto & Bocconcini Skewers

Ingredients (serves 21)

½ rockmelon
100g prosciutto
220g (1 tub) bambini (mini) bocconcini
Basil leaves, small
Cracked pepper (optional)
Bamboo looped mini skewers

Method

  1. Ball rockmelon using a melon ball scoop and set aside. Cut each prosciutto slice into 3 strips and fold up each strip.
  2. Thread a rockmelon ball, basil leaf, prosciutto bundle, bocconcini and another basil leaf onto each skewer.
  3. Place on a serving platter, grind cracked pepper over the top and serve.
