
Ingredients (serves 4)
1 baby cos lettuce
1 red oak lettuce or radicchio
2 avocado, sliced
4 radishes, thinly sliced
½ cup smoked almonds
Dressing
¼ cup avocado oil or grapeseed oil
1 tablespoon verjuice or white wine vinegar
1 teaspoon honey
Sea salt & cracked pepper
Method
- Combine all the ingredients for the salad into a large bowl and scatter over smoked almonds.
- For the dressing: Place all the ingredients into a screw-top jar and shake vigorously to form an emulsion, season to taste and pour over salad just before serving.
