Prawn, Avocado Canapes with Chipotle Aioli

Ingredients (serves 12)

12 cooked prawns, shelled and devein
1 avocado,cut in half, sliced thinly, cut in half
1pkt Waterthins bagelettes with poppy seed (store bought)* or any crisp bread
Chipotle aioli (store bought)*
½ bunch chives, finely sliced
2 limes, cheeks cut or quartered
Cracked pepper

Method

  1. Place crispbread on a flat surface and place a prawn on top. Lay 2 slices of avocado in the middle of each prawn, slightly sticking up. Add chipotle aioli and scatter chives over the top and cracked pepper.

To Serve

Place canapes on a serving plate and serve with lime cheeks or wedges.

Chef's Notes

Chipotle aioli can be found at most supermarkets. Bagelettes can be found at some supermarkets and gourmet food store. You can use any crisp bread or thinly slice a French stick and toast under the grill. Cool before placing prawns on top.
