Watermelon, Prawn and Feta Tapas

Ingredients (serves 12)

12 cooked prawns, shelled and devein
¼ watermelon, remove rind, cut into 12 x 3cm cubes
100g smooth feta cheese, cut 1cm thick, now cut in half
Mint leaves
2 limes, cheeks cut or quartered
Cracked pepper
12 bamboo knot skewers
Micro herbs, (optional)

Method

  1. Place watermelon cubes on a flat surface, place a feta cheese square on top, then 1 or 2 mint leaves. Thread skewer through the middle of the prawn tail and then through the body and insert skewer all the way through into the watermelon cube. Arrange some micro herbs in the middle of the prawn (this is optional) and top with cracked pepper.

To Serve

Place tapas on a serving plate and serve with lime cheeks or wedges.
